Gazpacho
Gazpacho is a cold soup made of raw ingredients. The following recipe contains no animal products, so it's vegan friendly.

Ingredients:

- 6 medium Tomatoes, quartered
- 4 Scallions, sliced
- 2 cloves of Garlic, minced or crushed
- 4 leaves of fresh Basil, torn to pieces
- 2 ribs of Celery, chopped
- 4 green and 2 red Mini Bell Peppers, top removed and seeded
- 2 medium Cucumbers, set 2/3 of one aside
- 2 teaspoons Salt

Since this is a raw recipe, be sure to observe STRICT sanitation rules and regulations. Wash your hands often (and well), and wash all veggies before cutting. If you desire, you can soak peeled cucumbers in water for 20-30 minutes (apparently this has some effect on the amount of gas cucumbers will give you, but I'm not too certain if it's true).

Cut 2/3rds of one cucumber and set aside. Chop all ingredients and puree in a food processor until everything is mixed well. Dice the 2/3rd of cucumber you save and mix with puree in a large bowl.

Serve and enjoy!

(Cover bowl with plastic wrap and store in the fridge, well above and away from meats.)
