Cranberry & Pecan "Freggie" Salad!
This recipe was a pleasant surprise of mine after collecting a load of fruits & veggies at the store and found a recipe online. Originally, it was intended as a "Fruit" salad. However, I did not have all the fruits called for, but had plenty of veggies to replace them! Hence, "Freggie" salad was born. This is a great raw vegan salad for the holidays, since cranberries are harvested around this time. It is a full bodied salad balancing sweet and tang perfectly with vegetables as a base, adding some extra and gentle flavor.

Ingredients:

- 1lb bag of Pecans
- 1 bag/box of fresh or frozen Cranberries
- 1 large Apple
- 2 sticks of Celery
- 2 small or 1 medium Tomato
- 1 dash of Lemon Juice
- 1 "splash" of Orange Juice
- 1 big dollop of Honey

Chop apple, celery, and tomato coarsely. Add pecans and cranberries in a food processor and grind (not too fine). You may need to stop the processor and push down some of the larger pieces to the bottom so the blade can easily get at them. If you're not confident with your food processing skills, you can leave out a little of each ingredient to add after grinding the rest semi-finely.

Transfer salad to your serving bowl and fold in juices and honey. Taste. If the salad is still too tart, add more honey. If too dry, add a little bit more OJ (not too much, this is a salad, not a soup!).

The finished product resembles ground meat... doesn't look exciting, but it sure is delicious!
